A Hands-on Sushi Class and Demonstration

An intimate, hands-on sushi cooking experience with Chef Jordan Dakota Jones. You are not sitting in the back of a crowded cooking school watching someone else make dinner. You are rolling, tasting, asking questions, changing ingredients when you need to, and learning with the chef right there beside you.

This is both a demonstration and a true hands-on cooking class, intentionally capped at only 11 guests. Instead of trying to flag down an instructor across a packed room, you will be able to ask Jordan questions as you work, get direct feedback on technique, troubleshoot your roll, learn substitutions, and actually understand what is happening beneath your hands.

Ingredient substitutions and many allergy-conscious or vegan adjustments can be planned ahead so more people can fully participate.

Every guest will receive a welcome mocktail libation made with Belli Pop ↗, a Louisville-area natural vegan soda, while everyone arrives, meets Jordan, gets cozy, and settles into the kitchen before we begin rolling at 7:00 PM.

Meet your chef
Jordan brings the craft of Japanese cuisine directly to people, whether that means setting up in a home kitchen for an intimate dinner, rolling sushi at an event, or teaching guests how to make it themselves.
Jordan has spent roughly 15 years working with sushi and building his craft through restaurant work, culinary competition, travel, and a constant curiosity about technique. His food story began young, with early restaurant experience and state-level culinary recognition through competition and SkillsUSA.
He loves tropical travel, trying new restaurants, learning new cooking methods, and exploring food with his wife and their young son, Jasper. When the garden is in season, he gardens, cans, and preserves too, folding those seasonal skills into classes whenever they fit.
Your cooking school for the night
For one winter evening, our artisan-built retreat center becomes your tiny sushi school. Knob N’ Wood is a handmade strawbale-and-cob home with timber framing, reclaimed and locally meaningful wood, stained glass, earthen walls, and a wood-fired masonry heater. The fire will be going while we cook.
Our fully equipped kitchen stays open to the dining room and wider gathering space, so the person teaching is never tucked away from everyone else. It was built for cooking, tasting, teaching, talking, laughing, and sitting down together with what everyone’s hands helped make.
Cob + strawbale walls, visible timber framing, passive-solar design, handmade finishes, reclaimed wood, stained glass, and masonry heat give the room its warmth. The craft is not decoration applied to the building. The craft is the building.
Tell us before you arrive
Because this is a small group, we have room to actually talk through substitutions rather than hand you a generic backup plate. Vegan adjustments and many allergy-conscious substitutions can be planned in advance. Please share dietary needs when booking so Jordan and Wild Indigo can confirm the safest and best route for your ingredients.
Some menu options include raw or undercooked seafood. Consuming raw or undercooked seafood may increase your risk of foodborne illness. Menu items may also include fish, shellfish, soy, sesame, egg, and gluten-containing ingredients.
Give yourself time to arrive
Please use the full one-hour arrival window beginning at 6:00 PM. Parking is spread across several areas of the property, and we’ll send the event-specific parking plan before the gathering so you know exactly where to go before you arrive.
Watch for event parking signs before you pull into the Wild Indigo driveway. If the closest area is full, signs will direct you clearly to the Upper Ridge Lot, Forest Lot, or Knobstone Trailhead Overflow.
The parking area directly beside Knob N’ Wood Retreat Center is intentionally held for guests who need the closest, simplest arrival route. If you need additional mobility support, please tell us ahead of time so we can reserve the right space and help plan your arrival.
Shuttle service begins once the Upper Ridge Sun Lot is full. From that point, the shuttle will run approximately every 10 minutes throughout the remainder of the arrival hour.
Please plan to be completely parked, walked or shuttled in, and settled before class begins at 7:00 PM.
