See it · then make it
Jordan demonstrates each technique before guiding you through it hands-on
Wild Indigo Forest Farm × Let’s Roll Sushi · December 4
A hands-on sushi class + demonstration with Chef Jordan Jones ↗
Join us for an intimate evening of Japanese culinary craft at Knob N’ Wood. Chef Jordan Jones of Let’s Roll Sushi will begin with a demonstration of essential sushi techniques, then guide each guest through a hands-on class in a deliberately small group of just 11. You’ll learn by making, with time to ask questions, refine your technique, and adapt ingredients when needed. The atmosphere is relaxed and welcoming, while the instruction remains personal, thoughtful, and designed to leave you confident enough to keep rolling at home.
The rice stuff · what you’re getting
This experience is intentionally limited to 11 guests so Jordan can teach at a pace that feels personal rather than crowded. You’ll see each technique demonstrated, practice it yourself, receive direct guidance, and have room to ask the questions that often get lost in a larger class.

Rice to meet your chef
Jordan brings the craft of Japanese cuisine directly to the table through private dining, events, and hands-on instruction. His approach is rooted in technique, curiosity, and the belief that food becomes more meaningful when guests are invited into the process rather than simply served the finished plate.
Jordan brings roughly 15 years of sushi experience, a background in culinary competition through Sullivan and SkillsUSA, and years of continued learning through restaurant work, travel, and time with other chefs, including chefs connected with Ashbourne Farms and Food Network experience.
Outside the sushi mat, Jordan enjoys gardening, canning, exploring new cooking methods, traveling, and discovering restaurants with his family. Seasonal ingredients and preservation skills often find their way naturally into the way he teaches and cooks.
This is how we roll at Wild Indigo
Your classroom for the evening is Knob N’ Wood, Wild Indigo’s handmade strawbale + cob retreat center. Timber framing, reclaimed wood, stained glass, earthen walls, forest-facing windows, and the warmth of our wood-fired masonry heater create a setting that feels intimate, grounded, and distinctly Wild Indigo.
The kitchen opens directly into the dining and gathering spaces, keeping the demonstration, hands-on instruction, conversation, and shared meal connected from beginning to end.
Cob + strawbale walls · visible timber framing · passive solar design · handmade finishes · reclaimed wood · stained glass · masonry heat. At Knob N’ Wood, the craft is not simply added to the building. The craft is the building.
Soy glad you told us · dietary accommodations
Keeping the class small gives us room to plan thoughtfully for dietary needs. Vegan adjustments and many allergy-conscious substitutions can be arranged in advance. Please share dietary restrictions when booking so Jordan and Wild Indigo can confirm appropriate substitutions before the event.
Some menu options include raw or undercooked seafood. Consuming raw or undercooked seafood may increase the risk of foodborne illness. Menu items may also include fish, shellfish, soy, sesame, egg, and gluten-containing ingredients.
Give yourself time to arrive
Please use the 30-minute arrival window beginning at 6:30 PM. Parking is spread across several areas of the property, and we’ll send the event-specific parking plan before the gathering so you know exactly where to go before you arrive.
The closest parking area beside Knob N’ Wood is intentionally held for guests who need the simplest arrival route. Tell us ahead of time if mobility support will shape your arrival so we can help plan the right space.
Shuttle service begins once the Upper Ridge Sun Lot is full and runs through the remainder of the arrival window.
